Almost hungry and no idea about snacks to prepare. Then let’s try and experiment a few hopefully delicious food items and be proud of one’s cooking. But here challenge is to adjust the quantity without my guidance.
Bread pizza: Have some leftover bread. No worries. Either make bread crumbs or try delicious bread pizza with veggies available at home. Apply butter on both sides and toast the bread slightly in a pan. Take a bowl, put onions, tomatoes without juice or seeds, capsicum, salt, chat masala and pepper powder (optional ), very small chicken or paneer pieces shallow fried in olive oil with salt, pepper powder and turmeric. Mix well. Top the veggies on the lightly toasted bread slices. Sprinkle some grated cheese and microwave till cheese melts. More the cheese, tastier the dish.
Aloo Kheema Tikki: Things to be kept ready are boil the potatoes, soak channa dal in warm water for 20 mins and grind coarsely. To start the dish we need to pressure cook kheema. So sauté onions, ginger garlic paste. Put kheema, red chilli powder, haldi, coriander powder, garam masala powder(not too much), salt and lemon juice and mix well. Add little water and give two whistle. For making tikkis, take a bowl, put peeled and smashed potatoes, grinded channa dal, pressure cooked kheema(no leftover water), chopped coriander and pudina leaves. Adjust for saltness and spicyness. Make round flat tikkis. For proper shape adjust by adding bread crumbs or corn flour. Shallow fry till golden brown on both sides.
Chicken Roll: Things to be done beforehand are to marinate small chicken pieces with salt, lemon juice, pepper, haldi and curd for one hour. Next prepare dough of maida, salt, milk or water, chat masala and keep for 20 mins. Start the dish by sauting onions. add ginger garlic paste, tomato, capsicum, sweet corn (optional), salt, red chilli powder, haldi, coriander powder and cook for few mins. After one hour of marination, shallow fry chicken pieces in a pan along with curd and leftover juices. Be carefull at this moment. Make round rotis of maida dough and cook from both sides by placing on hot tava. Once all rotis are done, take one roti, spread veggie mixture, chicken pieces, some mayonnaise, sprinkle chat masala. Roll the rotis and serve hot.
Vegetarians can replace chicken or kheema with paneer, soya chunks or potatoes. Try various mixtures and combinations of veggies as preferred and get ready for a ravishingly beautiful evening with family and friends.
